I bake calzones (and pizza) all the time and never use parchment paper. I don't have the mega-mixer either, so I knead the dough a bit, let it rise, etc. and roll it out on the counter. Then I pre-heat the stone for about 15-20 minutes (this is REALLY important, or it'll stick) and bake. The pre-heating makes it kinda cook the bottom layer right away so it doesn't stick.
